    I wanted a whole roasted chicken that I could use in a few recipes. Usually, I do a slow roast. Depending on the size of the chicken, roasting time is 70 to 90 minutes. The chicken I roasted was around 4 pounds. I checked it for color and used a meat thermometer to see that it reached an internal temperature of 165 degrees F. It was done in 60 minutes.
