Fermented Jalapenos and Red Onions

With very little effort and a measure of patience, you can have a very tasty condiment for your home cooked hamburgers.

Ingredients:

Jalapeños, 3

Red onion, one medium

Garlic cloves, 6 to 8

Kosher salt, 3 tablespoons

Filtered water, 4 cups

Preparation

Slice the jalapeños, wearing protection on your hands. Peel and slice the red onion. Peel and leave whole the garlic. Mix the salt with the water, stirring until dissolved. Begin layering the jalapeño slices, the red onion slices and cloves of garlic. Tap down in the jar. Pour the brine over. Weight the vegetables under the brine. Store in a cool location for six weeks. Check on the jar and and more brine, if necessary. Store in the refrigerator.
