These are the ingredients I always keep on hand: milk, flour, sugar, baking powder, salt and frozen berries. Mix them all up and we have a wonderful snack and something to enjoy with the morning coffee. For this recipe you can use an unsalted butter because this recipe calls for 1 teaspoon of salt. I use an old fashioned hand sifter, but you can use a large wire strainer, with a small weave.
Ingredients
Sugar, 1 cup
Butter, 4 tbsp
Milk, 1 cup
Flour, 2 cups
Baking powder, 4 tbsp
Salt, 1 tsp
Berries, 3 cups, fresh or frozen
Sugar, additional 1 ½ cups
Butter, additional 3 tbsp
Boiling water, 2 ½ cups
Preparation
Cream room temperature butter together with the sugar. Slowly add the milk. Using an electric mixer is perfect for this recipe. In a separate bowl, sift together the dry ingredients. Add these 1/3 cup at a time, to the wet ingredients. Mix all until smooth. The batter will be thick and dense. Butter a 13-inch by 9-inch baking dish. Add the batter, smoothing out to cover the bottom. Add the berries on top. Sprinkle the sugar over top. Pour the boiling water over everything. Dot with butter (3 tbsp). Bake at 425 F preheated oven for 30 minutes. Reduce the temperature to 350 F and bake another 30 minutes. The cobbler will be golden brown. Serve warm with whipped cream.
